Mouth Watering Vanilla Stewed Rhubarb Pudding

  • ½ cup Grain Rice (Short)
  •  2 ½ cups Skimmed Milk
  •  ½ cup Caster Sugar
  •  400 g Stewed rhubarb (Chopped)
  •  Ground Nutmeg (To Serve)

Instructions for Preparing Mouth Watering Vanilla Stewed Rhubarb Pudding

Step 1 Combine rice, milk, vanilla bean and half the sugar in a saucepan. Heat gently until sugar dissolves; then simmer, stirring, over low heat for 35 minutes or until thick.
Step 2 Remove vanilla bean and sprinkle with nutmeg. Combine remaining sugar with rhubarb and microwave until heated. Serve in glasses with rice.
