Penne with lamb, olives and spinach

  • 400g wholemeal penne
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 400g lean lamb mince
  • 1/3 cup (80ml) red wine
  • 400g can chopped tomatoes
  • 1/3 cup sliced, pitted olives
  • 1 small bunch English spinach, trimmed, leaves shredded
  • grated parmesan cheese

Instructions

Step 1 Cook penne according to packet directions. Drain. Set aside.

Step 2 Heat a non-stick pan over medium heat. Spray with oil. Add onion and garlic. Cook until onion softened. Add mince. Cook for 5–6 minutes. Drain off any fat.

Step 3 Add wine, simmer until reduced by half. Add tomatoes and olives. Simmer for 5 minutes. Add spinach. Simmer for 2 minutes.

Step 4 Toss hot pasta with mince sauce. Divide pasta between serving bowls. Top with parmesan.

Variations

Replace the lamb with chicken mince, red wine with white, and the olives with diced bacon.
