Microwave fried rice

125g cup microwave basmati rice
1 cup frozen mixed peas, corn and carrots
1 egg
1 shallot, chopped
1 teaspoon gluten-free, reduced-salt tamari

Instructions

Step 1Microwave rice for 1 minute. Place rice in a large bowl with vegies; cover and microwave on high for 3 minutes.

Step 2Spray a small saucer with olive oil and crack the egg into it. Cover and microwave for 1 minute, or until cooked to your liking.

Step 3Toss the chopped shallot with rice and vegies, top with cooked egg and drizzle with tamari.
