Healthy oat cake

  • cooking oil spray
  • 1 cup self-raising flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup chopped apricots
  • 1/2 cup chopped dates
  • 1/2 cup roughly chopped almonds
  • 1/3 cup canola oil
  • 2/3 cup skim milk
  • 1 egg, beaten

Instructions

Step 1 Preheat oven to 180ºC. Spray a medium loaf pan with cooking oil. Set aside.

Step 2 In a bowl, combine flour, oats and sugar. Add apricots, dates and almonds. Using a wooden spoon, stir in oil, milk and egg. Mix well.

Step 3 Pour mixture into prepared loaf tin. Cook for 30–35 minutes or until a skewer inserted into the centre comes out clean.

Variations

Don’t be afraid to experiment – swap the dried fruit for the same quantities of any other dried fruit you like. You can bump up the fibre in this recipe by using wholemeal self-raising flour.
