Creamy Spanish chicken

  • 900g chicken breast fillets, cut into bite-sized pieces
  • 1 teaspoon crushed garlic
  • 1 1/2 cups hot reduced-salt chicken stock
  • 2 carrots, chopped
  • 1 red capsicum, chopped
  • 400g can no-added-salt diced tomatoes
  • 400g can cannellini beans, rinsed
  • 6 new potatoes, halved
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1/2 cup light sour cream
  • 4 cups cooked brown rice
  • chopped parsley, to garnish

Instructions

Step 1 Place all ingredients (except sour cream, rice and parsley) into slow cooker. Stir well. Cook on high for 4 hours or on low for 7–8 hours. Season with black pepper. Stir through sour cream 20 minutes before serving. Garnish with chopped parsley and serve with cooked rice.
